It’s National Chocolate Cupcake Week
This is a week I love to celebrate. In fact, I would love to celebrate this every week. There is nothing quite like a chocolate cupcake. You can eat one any time of day. They are always good for breakfast with your favorite latte, a snack after lunch or the best dessert ever. As luck would have it, I have the perfect chocolate cupcake recipe to share with you to celebrate this most delicious of holidays. I have had this recipe for years, so I don’t remember where it came from, but I know you’ll like it.
Triple Chocolate Cupcakes
1 package devil’s food cake
1 package chocolate pudding mix
1 cup sour cream
4 eggs
½ cup oil
½ cup warm water
1 ½ cups chocolate chips
1 can of your favorite frosting
Preheat oven to 350 degrees and line cupcake tins with paper liners. Mix all of the ingredients together except for the chocolate chips and frosting in a mixer on low for 30 seconds. Then beat for two minutes on medium. Stir in 1 cup of chocolate chips. Fill paper cups two-thirds full with batter. Bake for 25-30 minutes or until an inserted toothpick comes out clean. Let the cupcakes cool. Then frost and decorate with the remaining chocolate chips.
