My mom has been reading up on steel cut oats recently, and was bragging to me about how healthy they are. She was also telling me how to cook them. This involved boiling the water, adding the oats, boiling the oats for 20 to 30 minutes and then letting the oats sit for a few minutes before eating.

I don’t know about you, but I don’t have that kind of time in the morning, so when I found a crockpot recipe I just couldn’t wait to try it. It is super easy, and all I have to do is throw everything in the crockpot the night before and it’s ready to eat in the morning.

Pumpkin Cranberry Crockpot Steel Cut Oats

1 cup steel cut oats

3 1/2 cups water

3/4 cup pumpkin puree

1/4 cup flax seed, ground

1/4 cup walnuts, chopped

1/4 cup craisins

1 teaspoon pumpkin pie spice

1/2 teaspoon vanilla

Butter

Lightly butter the crockpot, and then throw the steel cut oats, water, pumpkin puree, ground flax seed, chopped walnuts, craisins, pumpkin pie spice and vanilla into it. Stir it until it is well combined.

Set the crockpot on warm (not low) and let sit for 10 hours. Serve with brown sugar or maple syrup.
