I used to hate peas when I was younger. Every time my mother would fix them for dinner, I would bury them under some other food to try to get out of eating them, or drown them in ketchup to hide the taste.

However, since I’ve gotten older, I’ve acquired a taste for peas. Well, at least in this delicious and creamy pea salad. The best news is that since the salad also contains bacon, my husband and boys will eat it too.

Country Ranch and Bacon Pea Salad

3/4 cup ranch dressing

1/3 Greek yogurt

1 cup cheddar cheese, grated

1 medium size red onion, chopped

10 slices bacon

32 ounces frozen peas, thawed

2 teaspoons black pepper, ground

Toss the bacon in a skillet and cook until well done. Pull the bacon out of the pan and chop into little bits.

Whisk together the ranch dressing and Greek yogurt.

Strain the peas in a colander to get rid of any excess water. Place the peas in bowl and add the bacon bits and chopped onion. Pour the ranch mix over the peas and bacon and stir until well combined. Sprinkle the cheese and ground black pepper over the top of the pea salad and then gently stir until it is all mixed together.
