I’m not a huge peanut butter fan or a huge fudge fan, but my husband is both. Fudge is one of those desserts that people seem to think is hard to make, but it’s actually not that difficult. I like to make this for my husband when he does something nice for me, or if I’m feeling especially loving that day. My boys prefer it if I substitute chocolate chips for the peanuts. Either way, this easy fudge recipe makes all the boys in my house happy.

Easy Peanut Butter Fudge

1 cup regular sugar

1/2 cup creamy peanut butter

1/3 cup skim milk

1 tablespoon light corn syrup

1/3 cup chopped peanuts

1 teaspoon vanilla

2 1/4 cups powdered sugar

Throw regular sugar, peanut butter, milk and syrup in a pot over medium heat. Stir constantly until the mixture boils. Now let the mix boil for one minute, still stirring constantly. Take the pot off the stove, and let the mixture cool for 45 minutes.

Now that the mixture has cooled, add the chopped peanuts (or chocolate chips), the vanilla and the powdered sugar, then stir until fudge gets stiff. Scoop the fudge into a greased bread loaf pan and let it set up in the fridge for 30 minutes. Once fudge sets, cut it into squares and then serve.
