If you ever go to the local bakery or drool over the pastries in the local coffee shop while you’re waiting for your latte, then you will love this simple recipe I have put together for you. I came up with this recipe while trying to make zucchini bread. It seems that I had run out of some of the ingredients and so, as a true baker, I improvised.

What I ended up with was something, according to my husband, even better than zucchini bread. I had concocted a little something that is great with coffee, as a dessert or just a delicious snack.

Apple Pie Bread

1 egg, beaten

1/4 cup oil

1/2 cup sugar

1/2 chopped walnuts

1 can of apple pie filling

1 1/2 cup flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon baking powder

Open the can of pie filling and chop it in the food processor. Throw the processed pie filling, chopped walnuts, sugar, oil and egg in a large bowl and mix until combined. Dump the flour, baking soda, salt and baking powder on top of the pie filling mixture. Now use a spatula to gently mix the dry ingredients in with the wet. Be sure to only mix the ingredients until they are just barely combined or the bread will be very dense.

Pour the mix into a bread pan and bake at 350 degrees for one hour. Check the bread by inserting a toothpick. If the toothpick comes out clean, then the bread is done. If it has dough stuck to it, then bake it until the toothpick comes out clean.
