It is officially Fat Tuesday. For those of the Catholic faith, that means it is your last chance to eat and drink whatever you want before they take 40 days off for Lent.

In Lent, many Christians commit to fasting, as well as giving up certain luxuries in order to replicate the account of the sacrifice of Jesus Christ's journey into the desert for 40 days; this is known as one's Lenten sacrifice. Many Christians also add a Lenten spiritual discipline, such as reading a daily devotional or praying through a Lenten calendar, to draw themselves near to God.

For many people Fat Tuesday is the last chance at eating and drinking in excess. That is why the party in New Orleans gets so WILD. The Mardi Gras party in New Orleans is so popular with Americans, that we automatically attach creole food to the holiday. So Easter has ham, Thanksgiving has turkey and Fat Tuesday has gumbo and jambalaya.
