This was an easy recipe I made this weekend. I am trying to eat healthier and also it was a little chili so the soups/stews are perfect for this time of year as well.

This can come out a bit thicker so it's not as soupy but very hearty. You can make this recipe as soupy as you like though just adjust the recipe. This is "Easy Creamy Crock Pot Chicken and Rice".

Again you can adjust and add anything you want to this that you think may work. That's the fun of these types of recipes.

You'll need

  • 3-4 boneless chicken breasts cubed.
  • 2 cans of cream of chicken soup
  • 1 can chicken broth
  • 1 cup long grain rice or a suitable substitute
  • 1/2 cup chopped onion
  • salt and pepper to taste
  • I also added celery, garlic salt and corn

Mix all of this in the pot and on medium/low for 4 hours let it cook. Stir it once in awhile and then it should be good!

Serve hot or this is a great leftover or for me a weekly meal ( trying to eat better and be more organized about it)
