Something Unique – Italian Nachos
Typically, my fiancé cooks me something delicious on Sundays. It’s usually something extravagant and time consuming – and also, usually VERY delicious. Since Tuesday was New Years Day, he had the day off, so we decided to treat it like a Sunday. Yay for me! I got him to make me two delicious dishes in one week! Yesterday morning, before I could even sleepily pour my first cup of coffee for the day, he announced he was making Italian nachos. I have what I consider a “colorful palate,” and will try anything once. But, I will admit, I was hesitant. In my brain, nachos had always been filed under “Mexican food.” However, he has never failed to impress me in the past, so I eagerly agreed to try this new concoction. These were so delicious, that I even heated up leftovers this afternoon. If you know anything about me, you will know that I DISPISE leftovers, unless they are packaged in a restaurant to-go box. He followed the following recipe from ohsweetbasil.com.
Sauce
- 1 cups half and half
- 1 Cup heavy cream
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup parmesan
- Salt and pepper
- 2 tablespoons flour
Wonton Nachos
- Wonton wrappers cut in triangles
- Cooked, and shredded chicken (we used ground beef)
- sauteed peppers
- Mozzarella cheese
- Olives
- Parsley, chopped
- Parmesan cheese
- Oil for frying (peanut or canola)
In a sauce pot, over medium heat, add the unsalted butter and begin to melt it. Stir in the garlic until the butter is completely melted. Quickly add the flour and continuously stir the mixture until it is clumped together and golden. Whisk in the heavy cream and half and half. Bring to a boil and then turn down to a simmer for 8-10 minutes or until the mixture begins to thicken. Add the cheese and seasoning. Stir thoroughly.
*If you need to saute your peppers, just add them to a hot pan with a little oil over medium high heat. Cook, stirring occasionally, until tender.
Wonton Prep
Heat the oil in a large skillet, which contains oil about 1/3 of the way up, over medium high heat. Add the wontons one at a time and allow them to cook until they’re barely golden. Then, flip and cook again. Drain on a paper towel.
To Assemble
Line a baking sheet with parchment paper and then the wontons. Sprinkle with alfredo sauce, chicken, peppers and mozzarella cheese. Place under the broiler in your oven until the cheese is completely melted, 5-8 minutes. Remove from the oven and sprinkle with olives, parmesan cheese and parsley.
Unlike most of the dishes my fiancé makes, this one only took him about an hour. Also, even though it has quite a few ingredients, it didn’t seem overly involved. Next time you decide to have “Italian night,” you can make these nachos for the main course, or even just an appetizer if you have a bunch of mouths to feed. If you make these as a main dish, the above recipe will serve four. Enjoy!!
