If you are like me, the Food Network is almost as addicting as Discovery Channel. I cannot resist the urge to stop and watch while channel surfing. Nine times out of ten, I will get sucked into the vortex of whatever cooking show might be on. If that sounds like you, then you have probably found yourself watching a chef cook up what they call a "fusion recipe."

What's a "Fusion Food?" According to Wikipedia

Fusion cuisine is cuisine that combines elements of different culinary traditions that originate from different countries, regions, or cultures. Cuisines of this type are not categorized according to any one particular cuisine style and have played a part in innovations of many contemporary restaurant cuisines since the 1970s.

Some of the best fusion foods I have seen have been the combination of Korean BBQ and Mexican tacos. But, what if we took the good ol' Montana culinary tradition of venison burgers and mixed them with Canada's greatest contribution to the culinary world? Im talking about the mouth watering Poutine.

Turns out the combination of the two international traditions has a name. It is called a "Horseshoe."

The first iteration was made with ham—the namesake coming from the horseshoe shape of the boneless slices. But, over time, hamburger patties have taken the place of pork. And in this recipe, ground venison takes the place of the beef.

While traditional poutine involves cheese curds and gravy. The "horseshoe" is all about the cheese sauce.

1) simply make a roux using butter and flour. Add milk, beer, Worcestershire sauce, mustard, garlic powder, paprika, salt, and cayenne pepper. Stir constantly until slightly thickened. Add several small amounts of cheese until melted and let cool slightly while making burgers.

2) Combine ground venison with your favorite seasonings. (I like salt, pepper and little Worcestershire sauce). Cook burgers in hot pan until medium rare. (aproximatly 3 minutes per side)

3) Place burger on a piece of toast, and top with french fries. Finish by dumping a desired amount of cheese sauce on top.

BOOM! A Montana/Canadian fusion food.
