Its the most romantic holiday of the year. Valentines day is sneaking up on us this weekend. If your like me you have been struggling to find the perfect gift for your special someone. Do you buy jewelry? Do you buy flowers? Do you buy chocolates and flowers? Do you get that crappy heart candy that tastes like chalk? Or do you get your sweetheart something any carnivorous Montanan would love. Give the gift of a perfectly cooked steak. But, not just any steak. Give the king of the cuts! A heart shaped ribeye steak.

Don't doubt it for one second. The quickest way to your valentines heart in through their stomach. And any Montanan can agree that a well cooked steak is good for any special occasion. But, the art of making the perfect cut on the steak is what transforms it from a regular ribeye steak to a mouth watering valentine.

Here is what you will need to do.

First get yourself a boneless rib roast. Much like the one you got for Christmas dinner. Or, ask the butcher to cut a steak for you that is at least 3in thick.

Next get yourself a sharp knife and cutting board.

Now, is the tricky part. It is called butterflying. It is when you cut the steak down the center. But carefully not to cut completely through the steak. The steak should open up like a book.

If done correctly, once opened, the steak should resemble a heart shape. If needed cut a little more near the top of the "heart shape" to make it look for like a protein packed valentine.
