This recipe is a little twist on the classic potato soup. My mom always cooked with kielbasa, whether it was in a nice cold pasta salad during the summer or in a hot stir fry, it was a staple in my house growing up. However, it hasn’t been something I’ve cooked with much since I’ve been married, mainly because my husband is a huge hunter and we mostly eat game meat. Every once in a while I like a change of pace and will buy kielbasa. It’s almost considered a treat in my house since we have it so rarely.

When I ran across this recipe my mouth started to water. I absolutely love potato soup. Potato soup and kielbasa sound like a match made in heaven to me. I can’t wait to make this for my family to see what they think.

Tasty Kielbasa Potato Crockpot Soup

1/2 onion, chopped

1 clove garlic, minced

4 cups water

6-10 bouillon cubes

8 cups potatoes, diced

1 can of corn

16 ounces of kielbasa, thinly sliced

2 teaspoons Italian seasoning

8 ounces cheddar cheese, shredded

1 cup heavy whipping cream

Throw the onion, garlic, water, bouillon cubes, potatoes, corn, kielbasa and Italian seasoning into a medium to large sized crockpot and stir until it is all mixed together. Let it cook on low for 8 hours.

Before eating, add the shredded cheese and whipping cream and then stir. Leave just until the cheese has melted and then serve with salt and pepper to taste.
