Winter time is soup time in my house. You just can’t get by with serving soup for dinner when its 90 degrees outside. However, when the high for the week is in the 30s, not much tastes better for dinner than a nice steamy bowl of soup.

One of my absolute favorite types of soup is broccoli cheese. I have never attempted to make this soup previously because I thought it would be hard to. However, I was very wrong. It couldn’t be simpler. It only takes a few simple ingredients and a little bit of stirring and you have a delicious winter soup.

Super Simple Broccoli Cheese Soup

6 bouillon cubes

3 cups water

1 onion, diced

1 bag broccoli fourets

1 can evaporated milk

2 cups cheddar cheese, shredded

Toss the bouillon cubes, water, diced onion, broccoli, evaporated milk and shredded cheese into a medium sized pot. Stir and heat on medium until the soup starts to simmer. Do not let the soup boil or it could cause it to curdle. Once the soup begins to simmer, turn the heat down, cover the pot and let it simmer for 15 minutes, stirring occasionally. Serve. Salt and pepper to taste.
