Lemon desserts are quite popular in my house, especially this time of the year. There is just something about summer that screams lemon. Perhaps it’s because lemonade seems to be the drink of choice when the weather is hot. There is just nothing like drinking a tall glass of cool lemonade on a sunny day.

These cookies are a bit of a homage to summer, because they can be made with any fruit flavored cake mix. The great thing about this time of year is that you can find lots of fruit flavored cake mixes that you can’t find the rest of the year. Recently I’ve seen orange creamsicle, key lime and watermelon. With so many flavors to choose from, you can make a different flavored cookie for every day of the week.

Super Easy Summer Fruit Cookies

1 lemon, orange, strawberry or any fruit flavored cake mix

1 tub of Cool Whip

1 egg

1/2 cup powdered sugar

1 tub vanilla or cream cheese frosting

Pour the powdered sugar onto a large plate and set aside. Dump the cake mix, Cool Whip and egg into a bowl and beat with a whisk until well mixed. Drop teaspoonsfuls of the sticky dough into the plate with the powdered sugar. Roll the dough balls in the powdered sugar until they are coated. Place the coated dough balls onto a greased cookie sheet and bake at 350 degrees for 10 minutes. Let the cookies cool and then top the cookies with frosting.
