Meatloaf is one of those dinners that I don’t make very often, but when I do, I remember how much I like it and wonder why I don’t make it all the time. The problem with meatloaf for me is that unless I make it on the weekends, I just don’t have enough time to make it. Baked potatoes are just as bad when it comes to time consuming things to make. So when I found this crockpot recipe for meatloaf and potatoes, I was ecstatic.

I don’t know why I’d never considered making meatloaf in the crockpot before. It’s genius! I can’t wait to try my favorite meatloaf fresh out of the crockpot, along with some steaming hot potatoes. I’m sure this recipe will become a weekly dinner in my house.

Super Easy Crockpot Meatloaf and Potatoes

2 pound ground burger

1 box stuffing mix

1 package onion soup mix

1 cup water

2 eggs, beaten

1/2 cup barbecue sauce

5-6 medium sized potatoes

tin foil

Mix together ground beef, dry stuffing mix, onion soup mix, water, eggs, and barbecue sauce in a bowl until combined. Shape it into a loaf in the middle of a large crockpot.

Wash the potatoes, and then poke with a fork multiple times. Wrap the potatoes with foil, and then place them between the meatloaf and the edge of the crockpot. Set the crockpot on low for 8 to 10 hours.
