Lemonade and iced tea are the staple drinks of summertime. My favorite has always been strawberry lemonade. It’s quite refreshing on a hot summer day. The tartness of the lemon and the sweetness of the strawberry make it the perfect combination.

This cookie recipe also blends the best of both worlds, plus it is super simple too. All you need is a couple of cake mixes, and a few other simple ingredients, and you have summertime in cookie form.

Summertime Strawberry Lemonade Cookies

1 box lemon cake mix

1 box strawberry cake mix

4 eggs

2/3 cup olive oil

2 teaspoons lemon juice

1 cup powdered sugar

Get two large bowls. Pour the lemon cake mix in one bowl and the strawberry cake mix in the other. Add 2 eggs to each bowl, 1/3 cup oil to each bowl and 1 teaspoon of lemon juice to each bowl. Stir until well combined. Cover the bowls with plastic wrap and then place them in the fridge for 20 minutes. While the dough is chilling in the fridge, preheat the oven to 375 degrees and pour the powdered sugar on a plate.

Remove the dough from the fridge and form a small ball of lemon cookie dough. Then form a small ball of strawberry cookie dough, and gently roll the two balls together. Take the mixed cookie dough ball and roll it in the powdered sugar. Now place the ball on a cookie sheet, repeat until the sheet is full then bake the cookies for 10 minutes.
