Being a busy mom, I don’t always have time to make things from scratch. I absolutely love mixes, they make my life a lot easier. A couple things I buy in mixes are cakes, brownies, pancakes and biscuits. I’m not sure that my family would be able to eat without these.

I love my mixes, but I don’t love how expensive they can be. I recently found a mix that doubles as a pancake mix and a biscuit mix. It has taken the place of Bisquick and Krusteaz in my house. It is cheaper than buying these mixes and doesn’t take too much effort to make either.

Simple Baking Mix

9 cups flour

1/3 cup baking powder

1 teaspoon cream of tartar

1 tablespoon salt

4 tablespoons sugar

1 cup powdered milk

2 cups butter flavored Crisco

Mix together flour, baking powder, cream of tartar, salt, sugar and powdered milk until combined. Cut in Crisco until the mixture resembles coarse meal.

To make biscuits add 1 cup of milk to every 3 cups of simple baking mix and stir until combined. Drop tablespoonfuls of batter onto a cookie sheet and bake at 450 degrees for 10 minutes.

To make pancakes add 2 eggs and 1 cup of milk to every 2 cups of simple baking mix and whisk until well combined. Drop batter onto a hot skillet or griddle. Cook until lightly browned and then flip and cook other side until lightly browned.
