I have not always loved hummus. I actually used to hate it. However, it has grown on me, and I now love it on veggies, crackers and chips. It is rich and creamy with a pinch of salt, and even a bit tart. I think the reason that I learned to love hummus was because I fell in love with garbanzo beans. I used to make a five bean salad when I worked at a restaurant, and it was chock full of garbanzo beans. If you love garbanzo beans, or if you are just looking for a delicious dip, this recipe is for you.

Quick and Easy Hummus

1 15 ounce can garbanzo beans, strained and thoroughly rinsed

1/4 cup lemon juice

1 small garlic clove, minced

2 tablespoons olive oil

1/2 teaspoon kosher salt

1/2 teaspoon ground cumin

2 to 3 tablespoons water

Combine all ingredients, except for beans and water, into a food processor. Process for 30 seconds, scrape the bowl and then process another 30 seconds. Add garbanzo beans and process for 1 minute, and then scrape the bowl. Now process for another 2 to 3 minutes. If hummus does not reach desired consistency, add water 1 tablespoon at a time until desired consistency is reached.
