With Halloween fast approaching and fall in full swing, I’m trying to share my last few pumpkin recipes. This is one of my favorites. It is very easy and delicious. I love it with coffee, my mom loves it with tea, and my boys love it with milk. It pretty much goes with anything.

If you’re looking for a delicious fall treat to make on a chilly fall weekend, give this a try. You won’t be disappointed.

Pumpkin Pie Bars

4 eggs, beaten

1 2/3 cup sugar

1 cup oil

1 can pumpkin

2 cups flour

2 teaspoons pumpkin pie spice

2 teaspoons baking powder

2 teaspoons baking soda

1 teaspoon salt

1 tub of cream cheese frosting

Throw beaten eggs, sugar, oil and pumpkin into a blender and beat until well blended. In a separate bowl, mix flour, pumpkin pie spice, baking powder, baking soda and salt. Put the mixer on low and slowly add the flour mixture into the pumpkin mixture until it is all well combined.

Pour the batter into a greased 15x10x1 inch baking sheet. Bake for 25-30 minutes at 350 degrees.

Let the bars cool completely and then frost with cream cheese frosting and cut into 24 bars.
