A couple years ago I bought an ice cream maker after tasting the ice cream my parents had made in theirs. If you’ve never had homemade ice cream before then you are missing out. No ice cream I’ve ever bought has come close to tasting as good as homemade does.

Now that summer is here, it’s time for me to break out the ice cream maker again. This recipe is a great one if you love frozen yogurt and especially if you love Greek yogurt. It is a healthier version of a summer classic.

Pina Colada Frozen Yogurt

1/2 cup plain Greek yogurt

3/4 cup coconut milk

6 tablespoons sugar

1 teaspoon vanilla

1/4 cup crushed pineapple, drained

Throw the Greek yogurt, coconut milk, sugar and vanilla into a blender and blend until well combined. Set this mix into the freezer and let it set for 2 hours.

Take the mix out of the freezer and pour it into the ice cream maker. Add the pineapple and then turn it on. Let it mix until the ice cream is ready and then eat.
