My family loves lasagna. I love eating lasagna, I just don’t love making lasagna. It is one of those meals that’s so delicious, but it is also really labor intensive to make and takes a long time to bake, too. So, when I ran across this recipe, I was very excited.

This recipe cuts the cooking time in less than half and is pretty simple to make. It is also a plus that you don’t have to dirty as many pots and pans making lasagna this way. If you have a hankering for lasagna but don’t have the time to make it the old fashioned way, then give this recipe a try.

One Skillet Tortellini Lasagna

1 pound Italian sausage

2 cloves garlic, minced

24 ounces tomato sauce

20 ounces cheese tortellini, frozen

1 egg

15 ounces cottage cheese

1/4 cup parmesan cheese, shredded

2-3 teaspoons Italian seasoning

Salt and pepper to taste

Brown the sausage and the minced garlic in a large skillet or Dutch oven on medium heat. Then turn heat to medium-low and add the tomato sauce and tortellini and cook for about 5 minutes.

In a separate bowl stir together the egg, cottage cheese, parmesan cheese, Italian seasoning, and salt and pepper. Drop spoonfuls of the cheese mixture into the tortellini mixture. Put a lid on the pan and cook for another 5 minutes until the cheese just begins to melt.
