This is one of my favorite days of the year, Fat Tuesday. I’ve got my beads on (purple, green and gold are traditional), I’ve got some Doug Kershaw and Dr. John in the CD player, and it’s seafood gumbo for dinner tonight.  It’s a secret recipe. It includes the Cajun holy trinity (onions, green peppers, and celery), lots of garlic, fish, Andouille sausage, oysters, and gulf shrimp.  Hot sauce and file’ are your choice. Excuse me I gotta go now. The smells from the kitchen are overcoming.
