Healthy and Simple Fruit Cobbler Recipe

I have always loved cobblers. Fruit mixed with a crunchy crumbly topping is just divine. The one thing that did bother me was how much sugar and butter was in a cobbler. I always felt like it was making my healthy train derail.

So, when my mom told me about a simple recipe she had learned about at her fitness group, I just had to try it. It was surprisingly easy and pretty good, too. However, I thought it could be a little bit better. One of the things I loved most about cobbler was the oatmeal in it. I thought adding some oatmeal would make this cobbler recipe even better and a bit more like original cobblers.

The oatmeal gives the cobbler a little kick of antioxidants and fiber. I also chose to add some flax seed to the recipe because it is chock full of omega-3 fatty acids and fiber too. Adding these two ingredients to our raw fruits makes for a pretty healthy dessert, as far as desserts go anyway.

Healthy and Simple Fruit Cobbler

24 ounces of your favorite fruit, frozen

1 box of white or yellow cake mix

1 1/2 cup of oats

1/2 cup of flax seed, ground

1 can of diet clear soda (any kind will do)

Throw the cake mix, oats and flax seed into a bowl and stir just until mixed. Pour the frozen fruit into the bottom of a greased 9×13 inch pan. Dump the cake mix mixture over the fruit. Slowly pour the soda on top of the cake mix. Don’t stir it in with the fruit and cake or it won’t have the nice crust that a cobbler is famous for. Now, pop the cobbler in to the oven and bake for 45 minutes at 350 degrees.
