I never ate avocados when I was younger. I’m not sure if it’s because I didn’t like them, or if it’s because we didn’t have them very often. However, I absolutely love them now. I like them in salads, as guacamole and even just plain.

When I found this recipe for a creamy avocado pasta I just had to try it. It was great, and not too hard to make either, a real win-win. If you enjoy avocados, then you should give this recipe a try.

Easy Creamy Avocado Fettuccine

1 box fettuccine noodles

15 ounce can diced tomatoes

3 tablespoons olive oil

3 avocados, skinned and pitted

2 teaspoons garlic, minced

1/2 teaspoon salt

2 tablespoons lemon juice

1/3 cup grated parmesan cheese

Cook noodles as directed on the box. While the noodles are cooking, open and strain the can of diced tomatoes and set aside. Then throw the olive oil, avocados, minced garlic, salt and lemon juice in a food processor, and process it until it is nice and smooth.

Once noodles have cooked, strain them and then scoop them into a large bowl. Pour the avocado mix on top of the noodles, add the tomatoes and the parmesan. Stir until all the noodles are coated.
