In keeping with our New Year's resolution to lose weight, I've been making food that's very low fat/low carb. Right now we're gonna focus on pizza. It's really easy to make, and if you don't mind spending a few minutes in the kitchen, fun too! These are especially good if you like thin crust pizza. My wife would prefer a thicker crust, but she commented how really, truly good these are! Especially for "diet Food." The pic shows ours made on a lite flat bread (pictured below). We also use fat free or low carb tortillas. Following is the recipe for what we used tonight, but you can also use turkey burger, left over grilled chicken or anything you'd like on your specialty pizza that you think is ok for your meal plan.

Woody's Low Fat/Low Carb Pizza

Fat Free or Low Carb Tortilla or Flat Bread
Pizza sauce
Fat Free shredded mozzarella cheese
Diced onion, green and red bell pepper
Sliced fresh mushrooms
Diced jalapenos (if desired)
Turkey Pepperoni
Anything else fresh you'd like

Turn oven on broil, wait until hot
Place tortilla or flat bread directly on rack in oven and broil just until light brown and crispy
Remove tortilla or flat bread and smear pizza sauce lightly on the non crispy side
Cover with shredded mozzarella
Decorate with remaining ingredients
Broil directly on rack just a few minutes until top looks baked
