The zucchini plants in my garden have been spitting out zucchinis like crazy. There’s only so much raw zucchini, barbecued zucchini and fried zucchini that I can eat. I had to find something else to do with the stacks of zucchini that were piling up. So, I did what any woman does when she needs a new recipe, I looked on Pinterest and this is what I found. It’s a delicious chocolatey zucchini bread, a little bit of dessert and a little bit of snack.

Delicious Chocolate Zucchini Bread

2 squares unsweetened baking chocolate

3 eggs

2 cups sugar

1 cup coconut oil, melted

2 cups zucchini, grated or processed

1 teaspoon vanilla

2 cups flour

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons cinnamon

1/2 teaspoon nutmeg

3/4 cup chocolate chips

Melt the chocolate squares in a bowl in the microwave. Pour the melted chocolate into a large bowl, then add the eggs, sugar, oil, grated zucchini and vanilla. Whisk all the ingredients until well combined.

Dump the flour, salt, soda, cinnamon, nutmeg and chocolate chips on top of the mixed wet ingredients. Stir gently just until there are no clumps left, being sure not to over stir it.

Pour the batter into a greased bread loaf pan and bake at 350 degrees for one hour, or until a toothpick inserted into the bread comes out clean.
