If there is one thing my house full of little carnivores love, it’s pig. They love everything from ham shanks and bacon to ribs and sausage. No matter what cut of pig we seem to have, or how it is seasoned, the boys in my house love it. So, when I came across this recipe that was a bit of a twist on  traditional pulled pork sandwich, I just had to try it.

The honey and balsamic vinegar together make a beautiful medley in your mouth. Add to that the richness of pork and the crunch of coleslaw, and you have a mix that is pure perfection between a nice sesame seed bun.

Crockpot Balsamic Honey Pulled Pork Sandwiches

1 3-pound boneless pork roast

1/2 cup honey

1/2 cup balsamic vinegar

1/4 cup grape jelly

1/4 cup soy sauce

1/2 cup chicken broth

1/2 cup onion, minced

1 1/2 teaspoons garlic, minced

1 tablespoon cornstarch

3 tablespoons cold water

1 bag of coleslaw

Hamburger buns

Throw the pork roast into the crockpot. In a bowl, whisk together honey, vinegar, grape jelly, soy sauce, chicken broth, onion and garlic until well combined. Now dump the mixture on top of the roast, and let it cook for 8 hours on low.

Take the roast out of the crockpot and shred it using two forks. Place the shredded pork into a bowl and set aside.

In a separate, small, bowl, whisk together the cornstarch and water. Pour this mixture into a medium sauce pan along with the juices left in the crockpot from the roast. Whisk this over medium-high heat until it boils. Let it boil for 3 minutes being sure to stir it constantly. Pour this sauce over the shredded pork and mix until combined.

Place the pulled pork mixture and the coleslaw between the hamburger buns and eat.
