I love pasta, but during the summer months, I loathe hot pasta dishes. So to satisfy my pasta cravings in these hot months, I’ve created my own cold pasta salad recipe. This is my absolute favorite, but not all of my kids love peppers, so I do get a dirty look or two from a couple of them when I make it, but I don’t care. I love it. Try it and see what you think.

Cold Parmesan Chicken Pasta Salad

2-3 chicken breasts

1 package of uncooked pasta, rotini or penne

2 bell peppers, any color

1/2 cup Italian dressing

1/2 cup parmesan cheese

Cut thawed chicken breasts into bite-sized pieces and cook in a skillet on the stove over medium heat. Lightly season the chicken with salt and pepper. Cook the chicken thoroughly and then remove it from heat.

While the chicken is cooking, fill a pot with water and set it on the stove on high. Once the water begins to boil, add the pasta and boil it for the recommended time. When the noodles are done, drain them and rinse them with cold water.

Rinse and cut up the bell peppers into thin strips.

Throw the chicken, pasta and peppers into a bowl and stir. Now pour the dressing and the cheese on top of the pasta and stir until everything is coated with dressing and cheese. You can enjoy, now or you can set it in the fridge to enjoy later.
