Growing up, I can remember my mom and older brothers making unbake cookies. My brothers and my mom loved to make them because they were quick and easy, and full of chocolate. I had only made them once since becoming a mom, but when I did, my boys loved them.

My New Year’s Resolution was to eat healthier and so far, I’ve managed to be successful. Granted I don’t eat healthy every meal, every day, but I do try to do so as much as possible. That being said, I was very excited to find this a little bit healtheir version of my mother’s chocolate unbake cookie recipe.

This recipe is a triple threat. It is good for you, delicious and easy. It is so easy, that I’m going to have my kids make it for me, instead of me making it for them.

Chocolate Protein Unbakes

1/2 cup butter

1/2 cup skim milk

4 tablespoons chocolate protein powder

1 tablespoon cocoa powder

1 1/2 cupssugar

1/2 cup peanut butter

3 cups oatmeal

1/4 cup coconut flakes

2 teaspoon vanilla

Put butter in a sauce pan over medium heat until melted. Now add milk, protein powder, sugar and cocoa, and bring the mixture to a boil. Boil for just under one minute and then remove pan from heat. Immediately add the oatmeal coconut, peanut butter and vanilla. Mix well and fast.

Line a cookie sheet with wax paper. Drop rounded tablepoonfuls of unbake mix onto the paper. Allow the unbakes to cool, then eat.
