If you’ve ever made Rice Krispie treats before then you can make these cookies. They may sound like they are hard to make, but they are actually quite easy. This recipe is pretty much making a batch of Rice Krispie treats and then frosting them. These are super simple and super delicious too.

I have yet to find a child that doesn’t love Rice Krispie treats. These would make great after sports snacks or just an easy and fun dessert to make any day of the week.  I know the last time I made Rice Krispie treats my husband was begging me to put peanut butter in them. However, I am not a huge peanut butter fan, so I left it out. This recipe calls for peanut butter and chocolate. I think I might be willing to put up with the peanut butter, as long as I get the chocolate.

Give this recipe a try. It’s sure to please.

Chocolate Peanut Butter Rice Krispie Roll-Up Cookies

1/4 cup butter
10 1/2 ounces mini marshmallows
5 1/2 cups Rice Krispies
1 1/2 cups chocolate chips
1/2 cup peanut butter

Throw butter and marshmallows in a microwave safe bowl and microwave for one minute. Stir and then put back in the microwave and cook for 30 seconds and then stir. Repeat until marshmallows and butter have melted. Now add the Rice Krispies and stir until coated with marshmallow. Spread the Rice Krispie treats out onto a cookie sheet, being sure to press down on them so they are compact and flat.

Toss the chocolate chips and peanut butter into another microwave safe bowl. Cook for one minute and then stir. Repeat until the peanut butter and chocolate have melted completely. Once melted, spread on top of the Rice Krispie treats and then let cool until the chocolate mix sets up.

Use a spatula to loosen the Rice Krispie treats from the bottom of the cookie sheet. Now roll up the treats and cut the roll into slices. These cookies will look and taste like rolled up deliciousness.
