Have you had any of the delicious breakfast sandwich choices they have at fast food chains? I’ll admit that every now and then I eat them. They can get a little expensive to eat every day.

I’ve got a solution to our yummy problem. I recently ran across a recipe where the eggs were cooked in a muffin tin in the oven, making them the perfect shape and size to fit inside an English muffin, biscuit, bagel or even two small pancakes. Genius! I wish I had thought of that. It would have made breakfasts in my house a little easier and tastier.

Best Breakfast Sandwiches Ever

12 eggs

English muffins, biscuits, bagels or small pancakes

Bacon or sausage

Slices of cheese

Crack open one egg in each muffin cup in a muffin tin or crack all the eggs in a bowl, whisk them until well combined and then pour an equal amount into each cup. Bake the eggs at 350 degrees for 10 minutes.

Cook your bacon or sausage while the eggs are cooking. Once the eggs and meat are cooked, place them in between the two pieces of English muffin, biscuit, bagel or pancakes and enjoy.

You can pre-make your breakfast sandwiches and reheat them in the morning. You can also freeze the cooked eggs if you don’t use them all at once.
