At the beginning of this year I made a resolution to eat healthier and get in shape. I have been trying to do this slowly to hopefully make the changes that I’ve made stick. One of these changes is trying to cut out meat that is full of antibiotics.
With the last days of school upon us, we are all looking for ways to show our children’s teachers how much we appreciate all the hard work they’ve done this past year. I know we can never possibly hope to repay these teachers for everything they do, but even a little gesture of gratitude is greatly appreciated.
I love pasta, but during the summer months, I loathe hot pasta dishes. So to satisfy my pasta cravings in these hot months, I’ve created my own cold pasta salad recipe. This is my absolute favorite, but not all of my kids love peppers, so I do get a dirty look or two from a couple of them when I make it, but I don’t care. I love it. Try it and see what you think.
