New studies show that when you eat dark chocolate, the good bacteria in your gut grows and ferments it and then produces "compounds that are anti-inflammatory. "Why is that good?" Basically, these compounds are absorbed and "lessen the inflammation of cardiovascular tissue, reducing the long-term risk of stroke."
